Exclusive Tomato Oxtail Soup
A deeply savory slow-simmered oxtail soup enriched with tomatoes, ginger, and star anise, cooked for hours until the collagen-rich meat turns fall-apart tender and the broth thickens naturally.
Instructions
- 1

After rinsing the oxtail bones, put them into a pot with cold water.
- 2

Bring to a boil and blanch to remove the blood foam from the oxtail
- 3

Wash the oxtail bones with warm water again
- 4

Put it into a clay pot, add slices of ginger, sections of green onion, and star anise, bring to a boil over medium heat, then simmer on the lowest heat for 2–3 hours
- 5

I cooked it for about 2.5 hours, by which time the soup was rich and the oxtail bones were tender.
- 6

This time the tomatoes are a bit smaller, I added 4, peeled and washed the tomatoes.
- 7

Cut the tomatoes into pieces
- 8

Add the tomatoes to the oxtail soup, season with salt, bring to a boil over medium heat, then reduce to the lowest heat and simmer slowly.
- 9

Cook until the tomatoes are soft and mushy, then I simmered it for about another half hour.
- 10

Put chopped cilantro in the bowl
- 11

Pour in the tomato oxtail soup, it's incredibly delicious.
