Exclusive white-cut heart-protecting pork
Pork skirt steak is simmered slowly with ginger until the chewy, tendon-flecked meat turns tender, then sliced for dipping. A Cantonese-style white-cut treat that celebrates texture over fuss.
Instructions
- 1

Preparation: Clean the pork heart meat (we call it 'gesha meat') thoroughly.
- 2

Blanch for five minutes.
- 3

Then clean it thoroughly, put it back into the electric cooker, add a few slices of ginger, and an appropriate amount of water, and cook until the meat is fully cooked, about 30 minutes, depending on each person's preferred tenderness. Since this meat has tendons, it can be cooked for a longer time.
- 4

Once cooked, you can use chopsticks to poke it; if they go through easily, it’s done. Let it cool slightly.
- 5

Slice and plate.
- 6

Preparation: cilantro, garlic.
- 7

Chop the garlic into minced pieces, cut the cilantro into small segments, put them in a bowl, add sesame oil, flavored vinegar, and oyster sauce, and mix well. The sauce is ready.
