Exclusive 'Wild Vegetable' Tofu Assorted Soup
An assorted homestyle soup starring pungent-free wild chives with tofu cubes, shiitake mushrooms, ham and carrot, layering umami and gentle sweetness in a light, comforting broth.
Instructions
- 1

This is our local wild garlic chives. Although it is chives, it is different from the ones grown artificially. The leaves are long and wide, without the strong, pungent taste of regular chives, and it is very delicious.
- 2

Cut the shiitake mushrooms, ham sausages, and carrots and set them aside.
- 3

Cut the soft tofu into cubes and set aside.
- 4

Add the ham slices and sauté until fragrant.
- 5

Add the shiitake mushrooms and shredded carrots and stir-fry until fragrant.
- 6

Stir-fry the mushrooms and carrots until their colors come out, then add an appropriate amount of water and cook with the tofu for about 15 minutes. You can see the layer of carrot oil floating on top is very beautiful. So why do we stir-fry these ingredients first? Stir-frying them first makes the soup very rich and tasty when water is added. Add a little rice wine, salt, shrimp powder, and a little pepper and chicken powder, etc.
- 7

Chop the wild chives.
- 8

After tasting and adjusting the seasoning, add the wild chive leaves and serve once they change color. If you don't have wild chives, you can use chopped green onions or regular chives from the market.
- 9

The soup is rich and delicious, very enjoyable to drink.
- 10

You can try this method, it's really good! When buying ham sausages, try to buy the Shuanghui ones that are 2 yuan each, this way the soup will taste better.
- 11

The whole family can't stop praising it! It's not meat broth, but it's actually tastier than meat broth.
