Exclusive Winter Melon Oxtail Soup
A slowly braised oxtail soup with thick-cut winter melon, simmered until the collagen-rich broth turns silky and the melon soaks up deep, savory sweetness.
Instructions
- 1

4 pieces of oxtail, rinsed clean.
- 2

Blanch in boiling water to remove the blood foam.
- 3

Rinse the blanched oxtail again with warm water and put it into a clay pot. Add enough water to cover the oxtail bones, along with star anise, sections of green onion, and slices of ginger. The water should be added all at once. Bring to a boil, then reduce to the lowest heat and simmer slowly.
- 4

Peel the winter melon.
- 5

Slice it, not too thin, otherwise it will easily fall apart when stewing.
- 6

I stewed this oxtail for about 2 hours, and the meat is already tender.
- 7

Add the winter melon, and at the same time, add salt.
- 8

Continue to simmer over medium heat for more than ten minutes, until the winter melon becomes semi-transparent and tender.
- 9

Add some chopped cilantro to the big bowl.
- 10

Simply add it to the stewed winter melon and oxtail.
