Exclusive Yogurt Silver Thread Rolls
Delicate steamed rolls wrapping hundreds of fine, oiled dough threads inside soft yogurt-leavened skins for a signature silky, pull-apart, slightly tangy texture.
Instructions
- 1

Mix flour, yeast, and sugar, add yogurt and knead into a smooth dough, cover with a damp cloth and let it ferment in a warm place.
- 2

The fermented dough is 2 to 2.5 times larger than the original.
- 3

Roll the dough into rectangles of the same length.
- 4

Cut the dough sheets into thin strips and brush a layer of oil on top.
- 5

Place the thin noodles on one side of the thin dough sheet, and brush some oil each time you add a layer.
- 6

Put everything in place.
- 7

Roll it up and cut it into sections.
- 8

Put it in the basket to proof a second time.
- 9

Place the well-fermented mantou dough on the steamer with cold water, steam over medium heat for about 20 minutes after the water boils, then turn off the heat and let it steam for another 5 minutes before opening the lid.
- 10

Steamed silver thread rolls.
