Fancy eggs
Creative egg crepes made on an electric crepe maker from a two-stage batter of thin and thick consistencies, producing tender, lacy sheets both light and springy.
Instructions
- 1

Put a cup of flour into a bowl, add a small amount of water, and stir with chopsticks into a relatively thick batter.
- 2

Then gradually add water in batches, stirring to form a relatively thin batter. This method prevents the flour from clumping and makes it easy to stir smoothly.
- 3

Add an appropriate amount of salt according to personal taste, put in a little vegetable oil, mix well, and pour into a container for the batter.
- 4

Turn on the pancake maker and preheat it in advance, place the front of the pancake maker facing down, and dip it into the batter.
- 5

Gently shake it so that the excess batter in the pancake maker falls down. Turn the pancake maker over, and after a few seconds, the batter will slowly cook through.
- 6

You can also make the batter without adding oil; the pancakes cooked this way won't stick at all.
- 7

Crack two eggs into a bowl, add diced ham, chopped green onions, a little salt, and a pinch of pepper, and mix well.
- 8

Place the pancake into a suitably sized container, then pour the beaten eggs into the pancake. Remember to brush some oil in the container to prevent sticking.
- 9

Preheat the oven in advance, place the small cast iron pot in the middle layer of the oven at 140 degrees, and roast gently for about 10 minutes.
- 10

You can drizzle a few drops of light soy sauce on the surface after taking it out of the pot.
- 11

It has a smooth and tender texture, very delicious; even kids who don't usually like eggs ate two in one meal this time.
- 12

Low oil and low salt, so it can be eaten even during a diet.
