First post about pickled radish
Green radish peels are sun-dried until they bend without breaking, then massaged with fermented broad-bean paste for a chewy, savory keep.
Instructions
- 1

The outer skin of the green radish is cut to a thickness of about one centimeter. The total weight of the radish skin is 1040 grams.
- 2

Cut the radish into small pieces and place them on a rack to dry in a well-ventilated area or in the sun.
- 3

The weather is not very good, it’s not drying well in the sun.
- 4

The dried radish is sun-dried until it can be folded in half and is resilient. Mine isn't dried enough yet.
- 5

The total weight of the radish peel after sun-drying became 647 grams. Add 80 grams of Pixian broad bean paste.
- 6

grams of white sugar.
- 7

Put on gloves and squeeze with your hands for more than 10 minutes. During the process, it feels like water is oozing out.
- 8

The dried radish is a bit wet, so I put it in a sieve to drain water overnight. The next day, I spread it out on a rack and roasted it on the heater for two days. If the flavor feels a bit light, you can add an appropriate amount of salt or chili powder.

The simple dried radish is ready. Put it in a jar and store it in the refrigerator.
