Put the chicken breast into a pot, add water to cover the chicken breast, then add cooking wine, chopped green onions, and sliced ginger. Boil over high heat until the chicken breast is cooked through; generally, it is done when a chopstick can pierce the chicken breast and go through to the bottom. Remember to turn it over midway to prevent it from sticking to the pot.

After placing the cooked chicken breast in ice water to soak and cool, finally shred it into strips by hand along the grain and set aside.
