Five-Spice Braised Duck
A whole duck, pre rubbed with spiced salt for a day or two, is poached in a dark aromatic braising liquid until the flesh turns succulent and deeply seasoned.
Instructions
- 1

Rub the duck evenly inside and out with salt, five-spice powder, and pepper powder to absorb the flavors for one to two days (can be stored in the refrigerator).
- 2

Prepare the spices, ginger, garlic, and rock sugar.
- 3

Put the whole spices, ginger, garlic, and dried chili into a large pot, pour in soy sauce, dark soy sauce, cooking wine, and rock sugar, then add an appropriate amount of water. Boil for 20 minutes to bring out the aroma.
- 4

Put the whole duck into the pot and braise it for an hour (adjust the time according to the size of the duck).
- 5

Flip it several times during cooking to let the duck meat absorb the flavors better.
- 6

When the time is up, turn off the heat and continue soaking in the pot for half an hour.
- 7

Scoop out and let cool.
- 8

Cut pieces and plate them.
- 9

Finished product.
