Fragrant Pork Rib Soup
A clean-tasting pork rib soup built by soaking the ribs to draw out blood and skimming the foam, then simmering with shiitake mushrooms and carrot for gentle sweetness.
Instructions
- 1
Soak the pork ribs in clean water for half an hour to draw out the blood.
- 2
Bring cold water to a boil in a pot, and skim off the foam.
- 3
Wash the ribs and set them aside.
- 4
Clean the shiitake mushrooms, and cut the back into small pieces horizontally, vertically, and diagonally.
- 5
Sliced shiitake mushrooms. Because the shiitake mushrooms I bought this time are a bit large, and also to accommodate children, I cut the mushrooms into smaller pieces. For those who don't want to cut them smaller, you can simply score the back of the mushrooms.
- 6
Cut the carrot into large chunks with a rolling knife.
- 7
After washing the broccoli clean, tear it into small pieces and soak it in a bowl of salt water for about 10 minutes, which helps remove any residual pesticides and insects.
- 8
Pour hot water into the clay pot, add the ribs, and bring to a boil.
- 9
Pour all the mushrooms in at once.
- 10
Add the carrots, and after bringing it to a boil again, simmer on low heat for an hour.
- 11
Add the broccoli in the last about 10 minutes, turn to high heat and bring to a boil
- 12
After the broccoli is cooked, add salt and stir evenly, then you can turn off the heat.
- 13

The heartwarming and stomach-warming soup is ready!
