Fresh and Healthy Lifestyle Wellness Bread Red Yeast Goji Berry Wreath Bun
Fresh and Healthy Lifestyle Wellness Bread Red Yeast Goji Berry Wreath Bun: high-gluten flour, ice water and dry yeast in a few quick steps, baked until golden and fragrant. Simple ingredients, satisfying homemade flavor.
Instructions
- 1

Place all the ingredients into the bread machine, with water at the very bottom, followed by liquid butter, salt, sugar, flour, yeast (make a small well in the flour and bury the yeast), and red yeast rice powder. Select program 7 for kneading.
- 2

Take out the kneaded dough, lightly oil the cutting board, knead it by hand for another minute or two, and shape it into a smooth dough.
- 3

Place in a large bowl, cover with plastic wrap, ferment at 28°C until it doubles in size (at this current temperature, room temperature fermentation takes 30-35 minutes; if placed in the oven, it will double in 25 minutes, and fermenting longer will overproof it. In winter, it may take 40-60 minutes, so control the time yourself and keep an eye on it at all times).
- 4

Take out the dough, release the air, knead it again, flatten it, stretch it, and sprinkle the dried goji berries on the dough.
- 5

After kneading again until uniform, pat it flat and shape it into a rectangle.
- 6

Invert the baking tray over the dough and let it rest at room temperature for 20 minutes.
- 7

Divide into 6 equal strips with a scraper.
- 8

Place the dough strips on a baking tray covered with bran. There is no need to roll them; just make sure the bottom of the dough sticks to the bran.
- 9

Then take out the dough, pinch the two ends with your hands, and twist the dough to form a twisted shape.
- 10

Pinch the two ends of the dough together to form a ring shape.
- 11

Transfer the shaped dough onto the baking tray, leaving enough space between each piece of dough.
- 12

Place it in the middle of the oven, with a pan of boiling water on the lower rack, bake at 38 degrees with low heat, and finally ferment for about 20 minutes (a little longer in winter, about 30 minutes).
- 13

After the final fermentation is complete, remove the water, set the oven to 180 degrees with top and bottom heat, place in the middle layer, and bake for 20-25 minutes.
- 14

After baking, brush an appropriate amount of honey on the surface of the bread, and let it cool completely.
