Fresh and Spicy Quick Chopped Chili
Fresh red line peppers are minced raw with garlic, then seasoned with salt, sugar, and liquor instead of long fermentation. The bright, assertive heat is ready almost immediately.
Instructions
- 1
Gently wash the red chili peppers clean, and it’s best to wipe off the surface moisture with a dry towel. Make sure to select only those peppers that are intact and undamaged, otherwise it will ruin the pickling of the chopped chili.
- 2
Finely chop the chili peppers.
- 3
Peel the garlic cloves and chop them into relatively large pieces.
- 4
Add three spoons of salt.
- 5
Add half a spoon of MSG, which serves as a seasoning. If you are not used to the taste of MSG, you can skip it.
- 6
Add a small spoonful of white sugar.
- 7

Add high-proof liquor, I used Erguotou, a total of 10ml.
- 8

Clean the glass bottles thoroughly, disinfect them, and drain the water. Mix the chopped chili evenly and put it into the bottles. Seal the bottle mouth with plastic wrap and put the lid on. Store in the refrigerator for two to three days, and the chopped chili will be ready.
