Fresh Shrimp Potstickers
Potstickers hiding a whole fresh shrimp inside juicy ginger-scented pork filling, pan-seared until the bottoms turn golden-crisp, then water-steamed tender for a classic double-texture bite.
Instructions
- 1

Chop the ginger and scallions, mince the pork, and mix them together evenly.
- 2

Add light soy sauce, oyster sauce, sesame oil, salt, and pepper, then crack an egg and mix everything well.
- 3

Scoop an appropriate amount of meat filling onto the dumpling wrapper first, then place a shelled fresh shrimp on top.
- 4

Brush a little water on the edges of both sides of the dumpling wrapper, then fold and pinch them together.
- 5

Pour oil into a frying pan and heat it. When the oil is hot, add the potstickers and fry until the bottoms are golden.
- 6

Pour boiling water until it covers 1/3 of the dumplings, cover the pot and cook over medium heat for 3 minutes, then uncover and cook over high heat until the liquid is reduced.
