Freshly Pickled Radish
Paper-thin radish slices need just half an hour in a sweet-savory soy bath, tasting best chilled and flipped a few times as they drink in the glaze.
Instructions
- 1

Peel the radish and cut it into thin slices.
- 2

Sprinkle salt and marinate for 10-15 minutes, then remove excess water and spiciness.
- 3

Soak the radish in water to wash off the salt.
- 4

Drain the water.
- 5

Mix light soy sauce, dark soy sauce, white pepper, and sugar together. If you don't have dark soy sauce, you can leave it out and use light soy sauce instead; it's mainly used for coloring.
- 6

Put the radish in a large bowl and drizzle with sauce.
- 7

Marinate for 30 minutes. Stir a few times in the middle. It tastes better if refrigerated.
- 8

Very refreshing and appetizing.
