Fried rice
Everyday fried rice with finely curded egg, crisp celery, and sliced Chinese sausage, tossed together for a simple, balanced, homely bowl.
Instructions
- 1

Prepare the ingredients. Wash the celery tips. If you don't have any, you can use other green vegetables as a substitute.
- 2

Chop the celery tips into small pieces, slice the sausage and then cut into thick strips; if there is no sausage, you can omit it.
- 3

Crack the eggs into a bowl and beat them.
- 4

Heat oil in a pan. When it is about 40% hot, pour in the beaten eggs and quickly stir with chopsticks. This way, the scrambled eggs will be more broken up. Once the egg mixture is fully set, take it out and put it in a bowl for later use.
- 5

Add a little oil to the pan, heat it to 60% hot, add chopped green onions, then add diced celery, season with an appropriate amount of soy sauce and salt, and stir-fry evenly.
- 6

Pour in the sausages and stir-fry.
- 7

Pour in the eggs and stir-fry.
- 8

Pour in the rice and stir-fry for a while, letting the rice grains separate. Stir-fry for about 1 minute until the rice and side ingredients are evenly mixed, then it can be plated.
