Fried Rice with Dried Shrimp and Mustard Greens
Umami-rich fried rice lifting rehydrated dried shrimp and mustard greens, their stems and leaves separately stir-fried, with soft egg folds and sweet carrot dice.
Instructions
- 1

Collection of main ingredients.
- 2

Clean the dried shrimp, add some shredded ginger, soak in warm water for half an hour, or steam for 10 minutes.
- 3

Wash the carrots and mustard greens and cut them into small cubes, separating the mustard green leaves from the stems.
- 4

Beat the eggs, and stir-fry them in an appropriate amount of oil until cooked. Once the egg mixture solidifies, remove and set aside.
- 5

Add a little more oil to the pan and stir-fry the dried shrimp until cooked.
- 6

Next, add the carrots and mustard stems, and stir-fry until just cooked.
- 7

Add a small amount of salt and mix evenly, then serve.
- 8

If there is still a lot of oil in the pan, do not add more oil. Pour in the leftover rice and stir-fry, making sure the rice grains are dry.
- 9

Pour in the previously stir-fried dried shrimp, carrots, and mustard stems, then add the mustard leaves as well, and stir-fry everything together until well mixed.
- 10

Add an appropriate amount of soy sauce according to your preference, stir-fry and mix well (if you like a darker color, add a little more).
- 11

Finally, pour in the previously scrambled eggs and mix well, and it's done.
- 12

Savory and tasty, delicious.
