Garlic Cold Dressed Eggplant
Steamed eggplant slices wear a sauce of golden fried garlic, whose long sizzle turns pungent cloves sweet, mellow and deeply fragrant.
Instructions
- 1

A long purple eggplant 🍆
- 2

Peel the eggplant and cut it into long slices, then steam it over boiling water for 10-15 minutes (the time depends on personal preference for the softness of the eggplant).
- 3

Heat oil in a pan and sauté the minced green onion and garlic until fragrant. According to personal taste, add an appropriate amount of oyster sauce, light soy sauce, and a little water, stir-fry evenly, then pour over the steamed eggplant slices (stir-frying the minced garlic makes it more fragrant and not spicy; here, one whole garlic bulb was used).
- 4

Drizzle with an appropriate amount of fragrant vinegar, mix well and eat (or dip and eat) ✌~ (If you like it spicy, you can add some sesame chili oil).
