Garlic-flavored Red Chopped Chili
Fresh red chilies are wiped clean rather than washed, chopped with pungent garlic, and heavily salted before bottling, yielding a fiery condiment that deepens in flavor as it rests.
Instructions
- 1

Prepare fresh red chili peppers.
- 2

Prepare fresh garlic.
- 3

Do not wash the chili with water; use a wet towel wrung out of water to repeatedly wipe it clean. Chop it into small pieces and set aside.
- 4

Peel off the outer skin of the garlic.
- 5

Chop the peeled garlic cloves into fine pieces.
- 6

Put the chili peppers and garlic cloves into a large bowl.
- 7

Add salt (the amount of salt used is much more than when stir-frying), and mix well.
- 8

Prepare a clean, dry glass jar; fill the jar with the mixed chopped chili (while filling, tap the jar several times to make the chili pack more tightly).
- 9

Sprinkle a layer of salt on the surface of the prepared chopped chili.
- 10

Sprinkle a lot of salt, basically covering the chopped chili.
- 11

Cover the mouth of the bottle with plastic wrap and secure it tightly with a rubber band or string.
- 12

Put the lid on the jar to ensure it is airtight (it is best to store it in the refrigerator). The pickled chopped chili tastes better if eaten half a month later.
