Ginger Pickled in Vinegar
Young ginger slices cure in a two-vinegar blend with sugar, sharpening into a translucent, rosy condiment after just two days of chilling.
Instructions
- 1

Fresh young ginger (tender ginger).
- 2

Wash and dry the moisture.
- 3

Slice and marinate with 15 grams of salt for half an hour.
- 4

The salt dissolved after half an hour.
- 5

Prepare vinegar. I like to mix glutinous rice vinegar and pure rice vinegar in equal parts.
- 6

Put the young ginger into a clean, dry, and oil-free glass jar, add sugar, then pour in the two kinds of vinegar until they cover the ginger.
- 7

Cover it and put it in the refrigerator; you can taste it after two days.
- 8

Finished product. Sweet, sour, and crisp, cold and refreshing.
