Gleditsia Seed, Peach Gum, and White Fungus Soup
A labor-of-love sweet soup: peach gum and gleditsia seeds soaked overnight, double-stewed with snow fungus and red dates into a glossy, jelly-soft, subtly sweet nourishing tonic.
Instructions
- 1

Prepare the ingredients.
- 2

Wash peach gum and soapberry seeds and soak them in water overnight. In the morning, soak the white fungus and red dates in warm water. It will be ready in about an hour.
- 3

Rinse the soaked peach gum and soapberry seeds repeatedly to remove impurities, trim the roots of the white fungus, and break it into small pieces.
- 4

Put all the ingredients into the inner pot of the Taohua electric stew pot, add just enough water to cover the ingredients, cover with the lid, and steam over water (office workers can set a timer in advance).
- 5

Set the peach gum function for 3 hours. I am using the Joyoung Peach Blossom Electric Stew Pot.
- 6

After a few hours, open the lid, add the rock sugar, and stir once. Cover the lid and let the rock sugar slowly dissolve, making it sweeter and thicker. If you are in a hurry to eat, add the rock sugar halfway through after 2 hours.
