Glutinous Rice Cake and Pork Rib Soup
Pork ribs simmer two hours into a peppery ginger broth, served alongside pan-fried glutinous rice cakes golden and crisp outside, chewy within.
Instructions
- 1

Wash the ribs and drain the water.
- 2

Put it into a purple clay stew pot, add enough water to boil, and skim off the foam.
- 3

Add a few slices of ginger, a few Sichuan peppercorns, and an appropriate amount of salt, then drop in a few drops of vinegar and yellow wine. Cover with a lid and simmer on low heat for 2 hours, and the meat broth will be ready.
- 4

Clean the glutinous rice cake and drain the water, then use kitchen paper to wipe it dry.
- 5

Pour oil into a dry pot and heat it, then add the glutinous rice cakes and pan-fry over medium-low heat.
- 6

Fry until golden on one side, then flip and fry the other side.
- 7

Pan-fry until cooked.
- 8

Place the glutinous rice cake into a bowl, then pour the hot pork rib soup over it.
