Glutinous Rice Stuffed Lotus Root
Lotus root cylinders stuffed with glutinous rice, pressure-braised with rock sugar and red yeast rice until ruby-red; tender, sticky and delicately sweet.
Instructions
- 1

Choose relatively uniform fresh lotus roots, wash them clean and peel them, rinse the holes of the lotus root back and forth from both ends, the light made last night was dim.
- 2

Cut the lotus root from one side and fill the soaked glutinous rice into the holes.
- 3

Insert multiple toothpicks at the joint to secure it.
- 4

Put the lotus root, rock sugar, and red yeast rice bag into the pot, and cook in a pressure cooker for 50 minutes.
- 5

Take out the glutinous rice-stuffed lotus root that was soaked overnight (started around 8 PM last night) and chilled.
- 6

Cut into even slices; let them cool completely before cutting again to make them easier to shape and prevent them from falling apart.
- 7

Homemade sticky rice lotus root looks great, tastes good, and is fragrant, sweet, and soft. The sticky rice lotus root that costs dozens of yuan per plate in hotels can be made at a low cost at home, and it is clean, hygienic, and just as visually appealing.
