Goji Berry and Chinese Yam Chicken Soup
A nourishing old hen soup simmered in a clay pot with Chinese yam until the broth turns milky, then finished with goji berries and a touch of salt.
Instructions
- 1

Wash all the ingredients clean and cut them. (The old hen is very large, I only bought 1/4 of it.)
- 2

Heat the pot with oil and fry the ginger.
- 3

Add the chicken and stir-fry for a moment.
- 4

Add boiling water again, cover, and bring to a boil.
- 5

Wait for the chicken soup to boil, then switch to a different clay pot. Add the Chinese yam.
- 6

Simmer over medium heat for more than an hour, stirring a few times during the process. When the soup turns milky and is about ready to be served, add wolfberries and an appropriate amount of salt.
- 7

Finished product.
