Goji Leaf Pork Liver and Lean Meat Soup
A Cantonese tonic soup of peppery goji leaves and silky blanched pork liver soaked in vinegar water to remove gaminess, with marinated lean pork for a clean, iron-rich broth.
Instructions
- 1

Fresh goji leaves
- 2

Pick off the leaves and wash them clean
- 3

Slice the pig liver, rinse it several times with clean water, place it in a bowl, add a few drops of white vinegar, and soak it in water for twenty minutes (this effectively removes the gamey taste and keeps it tender).
- 4

After soaking for 20 minutes, take it out and rinse it. Slice the lean meat, put it in a bowl, and add shredded ginger, pepper, salt, oil, cornstarch, and rice wine, then mix.
- 5

Add water to the pot and bring it to a boil, add oil, add goji leaves, and a few drops of rice wine (this will keep the goji leaves bright green and prevent discoloration).
- 6

Bring the soup to a boil again and add the lean pork and pork liver, do not stir.
- 7

Boil the soup for about 2 minutes, then season with a little salt.
- 8

Finished product picture. A very nutritious soup.
