Golden Needle Mushrooms and Wood Ear Stewed Pork Spine
Pork spine bones soaked to purge blood, then long-simmered with daylily and wood ear mushrooms for a clean, deeply meaty broth studded with pleasantly chewy blooms.
Instructions
- 1

Preparation of pork spine before making soup. It needs to be soaked in clean water, changing the water two or three times during the process, so the soup will be more fragrant. This step is very important; you must soak to remove the blood. Otherwise, the soup will be cloudy.
- 2

Soak the black fungus and daylily in warm water until they open up, then wash and set aside. After soaking the black fungus, rub it with salt before washing it again, as this helps it get clean more easily.
- 3

Put the pork spine into the pot and add cold water. When it comes to a boil, there will be quite a bit of scum on the surface, which needs to be cleaned thoroughly. Then add ginger and scallions, bring to a boil over high heat for five minutes, and then simmer over medium heat.

After stewing for about 30 minutes, bring it to a boil on high heat for 10 minutes, then add daylily buds and black fungus and stew for a few more minutes. Add refined salt to taste. Use high heat for a thick soup and low heat for a clear soup. Later, you can bring it to a boil on high heat before adding other ingredients.

Very tasty.
