Grilled chicken breast strips
Poached chicken strips are coated in a garlicky preserved-lemon sauce, then roasted until edges turn golden for a light yet bold bite.
Instructions
- 1
Place the chicken breast in cold water, add ginger slices, cooking wine, and Sichuan peppercorns, and cook until done.
- 2
Drain the water.
- 3
Tear the chicken breast into small pieces and set aside.
- 4
Add the previously prepared lemon sauce and mix well.
- 5
This sauce is made by mixing minced garlic, chili, salted lemon, oyster sauce, light soy sauce, and aged vinegar together. It can be used directly to dress cold dishes or to dip vegetables, and both ways are very delicious.
- 6
Spread out on the plate.
- 7
Place in the oven, bake at 220°C with top and bottom heat for 10 minutes, then at low heat of 120°C for about 40 minutes.
- 8

If you like a dry and hard texture, slowly bake it according to the temperature of your oven. In the end, you can sprinkle your favorite single-mountain dipping sauce, which is really amazing.
