[Guangdong] Annual Good Fortune and Great Benefit Soup
An auspicious Cantonese slow-boiled soup of pork tongue, soaked dried oysters, and lotus root simmered for hours into a rich, deeply savory tonic symbolizing prosperity and good fortune.
Instructions
- 1

Prepare the materials.
- 2

The dried oysters need to be soaked until soft (which takes a relatively long time), while the other ingredients just need a simple rinse.
- 3

Place the pig's tongue in boiling water and simmer for a short while, scrape off the membrane, then rinse clean and cut into pieces (you can also cut it after making the soup).
- 4

Peel the lotus root and cut it into pieces.
- 5

Put all the ingredients into a clay pot with the ginger, add 3000 milliliters of water (about 12 bowls), bring to a boil over high heat, then reduce to low heat and simmer for one and a half hours.
- 6

You can add an appropriate amount of salt before turning off the heat.
