[Guangdong] Eucommia Black Bean Pork Tail Soup
A robust Cantonese herbal soup of pork tail segments simmered for hours with eucommia bark, black beans, red dates, and goji, yielding a collagen-rich, deeply savory, strengthening broth.
Instructions
- 1

Prepare all the good ingredients, remove the hair from the pig tails, and chop them into small sections.
- 2

Clean the ingredients thoroughly, and soak the black beans for a little while.
- 3

Remove the pits from the red dates mainly to prevent them from causing too much internal heat.
- 4

Put the pig tail into cold water and bring it to a boil for 1 minute, then remove the pig tail, discard the scum and blood, and wash it clean for later use.
- 5

Put all the prepared ingredients in together with the ginger slices (you can add a little cooking wine according to personal preference), bring to a boil over high heat, then reduce to low heat and simmer for one and a half hours.
- 6

Add salt before taking it off the heat.
- 7

Don't mind that this soup looks dark; it is actually a great tonic for nourishing yin and strengthening the kidneys.
