Guanyin Tofu Exclusive
A rustic mountain specialty in which leaf extract is coaxed into a wobbly jade-green jelly with the help of wood-ash water.
Instructions
- 1

Soak the leaves in clean water, rub them, and wash them thoroughly.
- 2

First, deal with the wood ash.
- 3

Add 100 grams of cooled boiled water and mix well.
- 4

Filter out the lye for later use.
- 5

Drain the water from the cleaned leaves and put them in a basin.
- 6

Pour in a pot of boiling water to scald it slightly, then pour out the boiling water.
- 7

Add 8 jin of cooled boiled water.
- 8

Knead by hand for about five minutes.
- 9

Put the water from the residue bag into a cloth bag and continue kneading, then strain out the juice.
- 10

Then continue stirring while pouring in the lye water.
- 11

If left to sit for about ten minutes, it will solidify into a gel.
- 12

You can eat it after washing it and making a cold salad according to your preference.
