Hakka Fried Glutinous Rice Cake
A Hakka festive sweet of glutinous rice dough enriched with lard and sugar, rolled in white sesame and shallow-fried until puffed, then pressed to form chewy, hollow golden spheres.
Instructions
- 1

Glutinous rice flour, sugar.
- 2

After mixing the two, add an appropriate amount of water.
- 3

Add a spoonful of lard.
- 4

Mix into a dough and let it rest for 1 hour.
- 5

Fry once the sugar is completely melted.
- 6

First, prepare a plate of white sesame seeds.
- 7

Take a small portion of dough and roll it into a ball.
- 8

Roll the surface in white sesame seeds.
- 9

Place a strainer at the bottom of the pot, heat the oil until boiling, add the dumplings, and cook over medium-low heat throughout.
- 10

When the dumplings float to the surface, press them with a slotted spoon and then rotate them a few circles around; the dumplings will quickly puff up and fry into a particularly round shape.
- 11

Fry until golden yellow.
- 12

Scoop out.
- 13

Finished product. The outer skin is crispy, the inside is soft and glutinous, a must-have snack for the New Year.
