Hand-pulled noodles with chili oil
Northwest-style hand-pulled noodles rested in oil, stretched long and chewy, topped with scallions and garlic, finished with sizzling hot oil.
Instructions
- 1

Add a little salt to the flour, mix with warm water until it forms a flaky texture, and knead into a smooth dough.
- 2

Knead the dough once every 10 minutes, three times in total.
- 3

Cut into pieces.
- 4

Roll into a long strip.
- 5

Take a large bowl, brush a layer of oil inside with a brush, and first place a strip in the bowl.
- 6

Layer by layer, brush oil on each layer, and finally let it rest for two hours.
- 7

Remove the roots from the greens and wash them clean. Chop the green onions into small pieces. Mince the garlic.
- 8

Boil water in a pot, and when the water boils, use your hands to pull it into long strips, adding water twice in the middle.
- 9

Put the vegetables in and turn off the heat when the water boils.
- 10

The noodles are placed in a large bowl, with added salt, Sichuan pepper powder, chicken bouillon, sugar, white sesame seeds, chili powder, chopped green onions, and minced garlic.
- 11

Heat oil in a pan, and after the oil starts to smoke, pour it over the seasonings.
- 12

Add light soy sauce and aromatic vinegar, mix well, and start eating.
