Hand-smashed cucumber
Smashed cucumber pieces soak up a punchy dressing built on salted plum, lemon, garlic and cilantro, giving a crisp, sour-salty salad that whets the appetite.
Instructions
- 1
Wash the cucumber, break it into two pieces by hand, put it in a storage bag, and smash it with the back of a knife. This way, the cucumber juice won't splash everywhere.
- 2
Put it in a bowl, add a little salt and marinate for a moment. This step is to keep it crispy when marinating later.
- 3
A few salty and sour plums, half a lemon, crushed with a spoon, mixed with an appropriate amount of marinade and sugar, then added aged vinegar and light soy sauce.
- 4
Add garlic and cilantro to the cucumber, pour in the sauce, mix well, and refrigerate for half an hour.
- 5
The natural sour and refreshing taste is simply amazing.
- 6
It started to release water when taken out of the fridge, the taste is extremely sour and refreshing, and if you like it spicy, add chili.
