Healthy Sugar Garlic
Northern white-skinned garlic heads are brined, air-dried, and steeped in a sweet vinegar mixture, mellowing into a gentle, sugary clove snack that is kinder to the stomach.
Instructions
- 1
Choice: You must choose northern white garlic, as it tastes better.
- 2
Clean the garlic thoroughly, but do not remove the garlic root end.
- 3
Mix 100 grams of raw water with 5 grams of salt to make a light saltwater solution, then soak for 2 hours. After that, take out the garlic and place it with the bulbs facing down in a ventilated, cool place to dry (it takes about two days).
- 4
Remove the garlic stem

For sweet garlic, the seasoning ratio is: 3 spoons of sugar and 2 spoons of vinegar (shelf life: can be stored sealed at 0-4°C for 1 year). For sour garlic, the seasoning ratio is: 3 spoons of sugar and 2 spoons of vinegar (shelf life: can be stored sealed at 0-4°C for 15-30 days).

Note: The vinegar should be a 1:1 mix of white vinegar and rice vinegar.
