Heartwarming chicken soup
Free-range chicken simmered with shiitake mushrooms, Chinese yam and sweet corn, seasoned with star anise and cinnamon for a deeply restorative, rustic, heartwarming soup.
Instructions
- 1

Cut the chicken into pieces and wash them clean (I am using a native hen).
- 2

Boil water in the pot, then put the chicken pieces in to remove the water!
- 3

After draining the water, scoop out the chicken pieces, wash them, and set aside.
- 4

Clean the shiitake mushrooms and set them aside.
- 5

Peel and cut the Chinese yam into pieces, and cut the corn into sections! As shown in the picture.
- 6

Put the chicken pieces, corn sections, shiitake mushrooms, and yam into the pressure cooker, add an appropriate amount of water, and add a spoonful of sugar.
- 7

Add one star anise! One piece of cinnamon, several slices of ginger, and an appropriate amount of chopped green onion. Then pour in a suitable amount of light soy sauce, cooking wine, and salt, and mix well. (You can taste the broth using a stirring chopstick to check the saltiness and sweetness).
- 8

Close the pressure cooker lid and start pressing to stew. Wait for the pressure cooker to whistle.
- 9

After it starts to simmer, stew for about 25 more minutes and then turn off the heat! Release the steam and transfer to a plate! Sprinkle some chopped green onions for garnish! A delicious pot of chicken soup is born!
