Heartwarming nourishing chicken soup
A three-hour slow-simmered tonic soup of old hen, dried scallop, red dates, cordyceps flower, and Chinese yam, giving a clear golden broth with firm, lean, flavorful meat.
Instructions
- 1
Prepare the ingredients.
- 2
Blanch the old hen either in pieces or whole. My clay pot is not very big, so I cut the chicken open. Add water, chicken, ginger, dried scallops, and red dates into the clay pot and simmer.
- 3
After cooking for an hour, add cordyceps flowers and yam, and add some vinegar.
- 4
Continue simmering for three hours.
- 5
The color is beautiful, and the taste is fresh.
- 6
The chicken is firm, not greasy, tastes great in the mouth, and is fragrant when chewed.
- 7
There's no need to add any salt at all; the taste is naturally fresh, and the whole house is filled with fragrance during the cooking process.
