Ho Kee Cured Meat Claypot Rice
Classic claypot rice cooked over cured pork and sausage with a cracked egg on top, its crusty golden base scraped up beneath a pour of sweet soy sauce.
Instructions
- 1

Soak the rice in water for 1 hour first, so that the rice absorbs enough water.
- 2

Brush the oil all around the earthen pot first.
- 3

Cut the cured meat into thin slices and blanch them for later use.
- 4

Pour in the rice and add water, with a rice-to-water ratio of 1 bowl of rice to 1.25 bowls of water.
- 5

Lay on the cured meat, add the cured sausage, bring to a boil over high heat, then simmer over low heat for 10 minutes.
- 6

Take out the sliced Chinese sausage and lay it out, then crack an egg in the middle. Pour in the prepared sauce. Cook on low heat for 5 minutes, then turn off the heat and let it sit for 10 minutes.
- 7

Prepare a sauce: 2 tablespoons of light soy sauce, 1 tablespoon of oyster sauce, 1 tablespoon of sugar, 2 tablespoons of sesame oil, add hot water and mix into a sauce. You can also adjust according to personal taste.
- 8

Add chopped green onions or cilantro and stir, then remove from the heat.
