Hollow sesame ball
Classic fried sesame balls that puff into airy hollow shells under a crackly sesame crust, thanks to baking powder in the chewy glutinous dough; crisp outside, pleasantly chewy within.
Instructions
- 1

Add sugar to the large bowl.
- 2

Pour in 180 grams of boiling water.
- 3

Dissolve.
- 4

Add glutinous rice flour.
- 5

Add 10 grams of oil and knead evenly.
- 6

Add baking powder (you can skip it if you don't like), knead into a smooth dough, cover with plastic wrap, and let it rest at room temperature for 20 minutes.
- 7

Take out the dough and divide it into 10 equal portions.
- 8

Take out a small portion and wrap it with red bean paste.
- 9

Roll in white sesame seeds.
- 10

Reunite again, the raw sesame balls will be fine.
- 11

Heat the oil in the pan.
- 12

When the oil is heated to 30% hot, put in the raw sesame balls.
- 13

As the oil temperature gradually rises, after it has slightly set, gently press the sesame balls with a slotted spoon to make them expand and heat evenly.
- 14

Keep the heat low throughout, fry until the sesame balls float.
- 15

Turn the heat up a little so it can brown.
- 16

Take out and drain the oil.
- 17

Alright.
