Home-style Braised Noodles with Green Beans
Iconic northern braised noodles where fresh noodles steam over a savory stew of green beans and pork, absorbing the glossy, aromatic braising liquid.
Instructions

Prepare the ingredients. According to the amount needed for my family, there are four of us, so I bought fresh noodles, though you can also make your own noodles. After buying the noodles, loosen them up and add a bit of cooking oil to make the texture better. It's optional; I added a bit of oil. We didn't have carrots at home, so I didn't add any.
- 2

Heat a cold pan with cold oil, add scallions, ginger, garlic, star anise, and Sichuan peppercorns, and stir-fry until fragrant.
- 3

After adding the meat and stir-frying until the color changes, add cooking wine, dark soy sauce, light soy sauce, sugar, and salt to season.
- 4

Add the green beans, stir-fry for one minute, then add light soy sauce, oyster sauce, thirteen-spice powder, Sichuan pepper powder, and dark soy sauce for coloring. After stir-frying for one minute, add water.
- 5

Add a little more water, and after it boils, take out a bowl of the broth for later. Taste the broth, and if it has no salt, you can add some salt.
- 6

The soup should be as level as the dishes, and place a pair of chopsticks.
- 7

Spread out the noodles, tearing the long ones a bit shorter, and make sure the noodles don’t touch the edge of the pot. Then pour the soup that was just ladled out over the noodles, cover the lid, bring to a boil over high heat, then reduce to low heat and cook for 10 minutes or 8 minutes. Keep an eye on it midway so the water doesn’t dry up. If you feel the water is running out quickly, you can add a bit of the soup that was just ladled out and gently move the noodles a little.
- 8

This is what it looks like when the time is up, with some broth on the side. Then gently separate the noodles, and finally use the pan to stir-fry and mix the vegetables underneath evenly.
- 9

These are stirred noodles. Because too little dark soy sauce was used, they didn't get colored, and there are no carrots, so the final dish doesn't look very good.
- 10

But I like eating chili peppers. Adding chili oil made it look much better, and it was really delicious to eat. I ate two plates. The noodles, because a bit of oil was added, were not sticky and had a very good chewiness.
