Homemade Breakfast Mini Fried Dough Sticks
Mini youtiao made from repeatedly folded and rested dough, chilled overnight, then fried to a shatteringly crisp shell with airy, chewy strands inside.
Instructions
- 1

Put the flour and various types of flour into a bowl, then mix evenly.
- 2

Add one egg to the water and stir evenly.
- 3

Add egg water to the flour and stir until it forms a flaky texture, then fold into a dough and add 15g of cooking oil to continue folding.
- 4

Fold the dough from the edges toward the center and knead repeatedly 3 times, letting it rest in the center for 10 minutes each time before the next folding and kneading.
- 5

Wrap the kneaded dough for the youtiao in plastic wrap and place it in the refrigerator to chill for 6 to 8 hours.
- 6

After a few hours, take out the well-fermented dough and let it return to room temperature.
- 7

Open the film.
- 8

No need to knead the dough anymore, just roll it directly into a long strip.
- 9

Cut into strips.
- 10

After applying water between the strips, fold them over each other and press along the lines to form the dough for youtiao.
- 11

Because there wasn't much oil in the pot, the surface of the oil was narrow, and the dough sticks were cut into small pieces.
- 12

When the oil reaches about 50% heat, put the youtiao dough into the pan to fry.
- 13

The chubby little fried dough sticks are golden and very cute, light and fluffy, with a crispy texture, and very appetizing as a breakfast.
