Homemade Candied Haw

Homemade Candied Haw

Classic street-style candied fruit skewers dipped in a pale amber sugar syrup cooked to the hard-crack stage, setting into a thin, glassy, crackling shell over juicy fruit.

Instructions

  1. 1

Skewer the fruit with bamboo sticks and set aside.

  2. 2
    Step image

Add a small amount of water to white sugar at a 1:1 ratio, simmer over low heat for about 45 minutes. Use chopsticks to drop the syrup into cold water; when it gives a popping sensation, reduce the heat to the lowest to keep warm. Lightly dip the fruit into the bubbles and then quickly turn it over.

  3. 3

    Move quickly and lightly.

Place it on the prepared parchment paper, and after a while it will solidify; at this point it is already very crispy.

It solidified in just a few minutes.

Pack it into a box and place it in the freezer for storage. When the weather is hot, make sure to eat it as soon as possible.
