Homemade Chopped Chili [Super Spicy]
Fresh bird's eye chilies, garlic and ginger are all minced together and kept in containers free of oil and raw water, the two enemies of a clean ferment.
Instructions
- 1
An appropriate amount of fresh small chili peppers, washed
- 2
Air dry the surface water [I placed it next to the heater to dry, which is faster, you can also wipe it dry]
- 3
Remove the stems after drying
- 4
Peel three bulbs of garlic, wash them, and let the water dry
- 5
Finely chop the small chili peppers. It doesn't matter how you chop them, as long as they are chopped finely.
- 6
After chopping, put it into a bowl with no oil and no raw water
- 7
Smash the garlic with a knife and chop it, not too finely, then put it into a bowl after chopping.
- 8
Cut two thin slices of ginger like this, chop them into mince, and also put them into the bowl.
- 9
Set aside for backup
- 10
Because the chili pepper is really too spicy, I added another green pepper. I also chopped it up and added it to the bowl. This also looks a bit better.
- 11
All the ingredients are ready
- 12
Start adding salt. Adding more salt can extend the time it can be kept, but it should not be too much.
- 13
Add chicken essence
- 14
Add sugar, more
- 15
Pour one bottle cap of high-proof liquor
- 16
Put it into the bottle, do not pack it tightly, just tap the bottle on the table a few times. If it’s not full, fill it up to nine-tenths full.
- 17
After packing it, evenly pour a bottle cap of white liquor and evenly sprinkle a layer of salt.
- 18
Cover the bottle mouth with plastic wrap and then put on the bottle cap. After leaving it at room temperature for five hours, put it in the refrigerator.
