Homemade Coconut Cookies
Homemade Coconut Cookies made with low-gluten flour, butter and desiccated coconut, baked until golden and crisp. A great choice for family gatherings or a weekend treat.
Instructions
- 1

Soften the butter and add the sugar.
- 2

Use a whisk to beat until the mixture is evenly combined.
- 3

Add the beaten eggs.
- 4

Continue to beat until the mixture is uniform.
- 5

Sift in the cake flour, and add the milk powder and desiccated coconut.
- 6

Knead the dough to a moderate softness and firmness, cover it, and let it rest for 15 minutes (do not over-knead).
- 7

Roll the dough into a cake shape of even thickness.
- 8

Use a mold to cut out evenly shaped cookie dough pieces.
- 9

Brush on an even layer of egg yolk.
- 10

Preheat the oven for 5 to 10 minutes, set the top heat to 170°C and the bottom heat to 150°C, and bake for 18 minutes (since ovens vary and cookies differ in thickness, pay attention to adjusting the temperature, or cover with aluminum foil or parchment paper in time to prevent scorching).
- 11

Coconut cookies are out of the oven, with a strong coconut flavor, fragrant, crispy, and delicious.
