Homemade Egg Youtiao
Yeast-risen dough enriched with eggs is stretched, paired, and deep-fried until it puffs into golden crullers, crisp outside with an airy, chewy honeycomb interior.
Instructions
- 1

Add youtiao leavening agent to the flour, and mix double-acting baking powder and salt evenly.
- 2

Crack 2 eggs.
- 3

Add water and cooking oil, then use a folding method to fold from the edges toward the center, let it rest for 15 minutes, and then continue folding the dough toward the center three more times.
- 4

Divide into 2 portions and knead until evenly mixed.
- 5

Wrap in plastic wrap and let sit for 3 hours (hot summer weather).
- 6

No need to knead the dough again, stretch it lengthwise and roll it out.
- 7

Cut into a width of two fingers, brush water on one strip lengthwise, overlap with another piece, and press along the middle.
- 8

Pour an appropriate amount of cooking oil into the pot and heat it until it reaches 50% hot, then add the dough sticks and fry until golden yellow.
- 9

Continue frying the youtiao (this is my own custom recipe youtiao).
- 10

The fried youtiao is fluffy without dense dough lumps, with evenly distributed pores, a fragrant and soft texture, and pairs best with soy milk.
