Homemade Fresh Chopped Chili
A generous batch of fresh chopped chilies and garlic seasoned with salt, sugar, and a splash of strong liquor, the essential base for countless Hunan dishes.
Instructions
- 1

Prepare the ingredients in advance: 3 jin of red chili peppers, 1 jin of garlic. Seasonings: 100 grams of salt, 30 grams of sugar, 10 grams of high-proof white liquor.
- 2

After washing the chili peppers thoroughly and drying them completely, remove the stems; peel the garlic cloves directly.
- 3

Wear disposable gloves (it's best to wear several layers), first cut the chili peppers open, then chop them into small pieces (about the size of mung beans). I finished cutting these peppers in six batches.
- 4

First, slice the garlic, then chop it finely.
- 5

Put the chopped chili and garlic into a large bowl, and pour in all the seasonings.
- 6

Put on disposable gloves and mix evenly with your hands.
- 7

Put it in a clean container without water or oil.
- 8

Seal it properly and store it in the refrigerator. It can be eaten after one week.
