Homemade Hand-Pulled Pancakes (Delicious and Easy to Make)
Layered hand-shredded pancake combining a scalded and a cold flour dough with oil and scallions, pan-fried until crisp outside, chewy, and pull-apart flaky inside.
Instructions
- 1

Put 500 grams of flour into the basin.
- 2

Pour 100 grams of boiling water over the flour and stir well.
- 3

Add 10 grams of oil and 5 grams of salt to the mixed dough, and use cold water to knead it into a smooth dough.
- 4

Cover the kneaded dough and let it rest for 10 minutes.
- 5

While the dough is resting, we chop the green onions and set them aside.
- 6

After the dough has risen and is kneaded again, let it rise for a second time for 30 minutes.
- 7

Next, for the second rising, we will make an oily dough. In a bowl, add flour, salt, and 1 gram of Sichuan pepper powder, 3 grams of Chinese five-spice powder, then pour in the cooked oil.
- 8

Stir until there are no lumps.
- 9

Roll the proofed dough into thin sheets.
- 10

Spread the rolled-out dough evenly with the flavored oil, sprinkle the prepared chopped green onions, and fold it in half.
- 11

Fold the dough in half, then cut it into strips and slowly stretch them into long strips.
- 12

Tightly twist the rolled-up strips and coil them; the looser they are, the more scattered they become.
- 13

Roll out the kneaded dough into a dough sheet.
- 14

Brush oil on the electric griddle and place the dough on it until both sides are golden brown.
- 15

The dough, golden on both sides, is removed from the pan and patted apart while hot.
- 16

The freshly cooked hand-grabbed pancake is crispy and delicious, and paired with a bowl of steaming hot spicy pepper soup, it is truly tasty. If you want to eat, let's make it together.
