Homemade Hunan Dried Radish
Sun-dried radish chunks are pressed under heavy weights to draw out moisture, then cured until chewy and amber. This Hunan pantry staple keeps for months.
Instructions
- 1
Wash the white radish.
- 2
Cut in half.
- 3
Cut into chunks with the skin on.
- 4
Place into the basket in layers of radish and layers of salt.
- 5
Place a heavy object (a bucket of oil) on top to press the brine out and allow it to flow out of the container. Generally, after pressing heavily for two days, remove the radishes and sun-dry them until they are dry.
- 6
I used a small amount and dried it under heavy pressure for a day. Note: frequently turn it over to dry on both sides.
- 7
After being sun-dried for two days, the radish strips should now be light brown in color.
