Homemade Jerky
Strips of fresh beef are marinated overnight with spirits and spices, then hung to air-dry for days until chewy, concentrated and full of flavor.
Instructions
- 1
A little over a pound of fresh beef.
- 2
Cut into strips and set aside.
- 3
Pour all your favorite seasonings into a bowl, add a spoonful of high-proof baijiu, mix well, then refrigerate for 24 hours.
- 4
After marinating for 24 hours until the flavor is sufficient, skewer them together with bamboo skewers.
- 5
Just place it on the balcony to air dry for about 48 hours.
- 6
I like the softer weather of around 20 degrees in the south, just one day is enough. If you like a harder texture, you can let it air-dry for a few more days, by then it will be just as firm as the ones sold outside.
- 7
Steam over high heat for about thirty minutes.
- 8
You can continue air-drying and then pack it up and refrigerate. I dried it all in a day, so there's no worry about spoilage.
