Homemade Lu Duck
A whole duck is seared until golden, then braised in a fragrant soy, rock sugar, and spice broth until glossy, tender, and richly caramelized.
Instructions
- 1

Clean the duck and apply 2 tablespoons of dark soy sauce to marinate for 15 minutes.
- 2

Heat the pan and add 2 tablespoons of peanut oil, then pick up the marinated duck and brush it in the pan.
- 3

The duck is pan-fried evenly from the inside out.
- 4

Stir the peanut oil evenly and pour it over the duck until the duck skin turns golden yellow.
- 5

Add ginger, garlic, brown sugar, bay leaves, and star anise and stir-fry until fragrant.
- 6

Add an appropriate amount of water to about 8 bowls, enough to cover two-thirds of the duck.
- 7

Add all the ingredients to the duck, including garlic sprouts, salt, soy sauce, and oyster sauce.
- 8

After bringing the water to a boil, simmer for 15 minutes, then turn the duck over and taste the soup to see if it is flavorful enough.
- 9

After 30 minutes, open it again to pour some of the sauce over the duck.
- 10

After boiling, simmer for a total of 40 minutes, then reduce the sauce over high heat, continuously basting with the sauce.
- 11

Remove the duck from the pot and wait for five minutes, leaving half a bowl of the broth for later use.
- 12

Cut the roast duck into small pieces and pour the sauce over it, and it's ready!
