Homemade Mixed Salad
A generous household-style medley of bitter greens, lettuce, cucumber and peanuts gets a garlicky dressing, capturing the crisp, varied textures of a traditional northern table salad.
Instructions
- 1
Clean the radicchio thoroughly, remove the roots, and cut it into two sections.
- 2
Tear the lettuce into small pieces and wash them clean.
- 3
Smash the cucumber and cut it into small pieces.
- 4
Remove the roots of the cilantro, wash it clean, and cut it into small pieces.
- 5
Since peanuts are not used much, the ready-made ones bought from outside are placed on one side for later use.
- 6
The chopped green onions and minced garlic I prepared.
- 7
Once all the ingredients are prepared, put them all in a slightly larger bowl, and be sure to place the minced garlic and chopped green onions on top.
- 8
Pour all the salt, chicken essence, sugar, cooking wine, rice vinegar, soy sauce, and other ingredients into a bowl from one side. Heat oil in a pan, add the prepared Sichuan peppercorns when the oil is hot, and when they turn black, pour the hot oil over the chopped scallions and minced garlic, then remove the peppercorns.
- 9
Add some sesame oil, stir well, and serve.
