Homemade Oily Salted Eggs
Eggs are rolled in high-proof liquor, dusted all over with salt and swaddled in foil, then left to cure patiently until the yolks melt into molten, oily gold.
Instructions
- 1
First, wipe the eggs clean with a damp cloth.
- 2
Pour the high-proof liquor and salt into separate large bowls, and at the same time prepare a stack of aluminum foil (large enough to wrap the entire egg).
- 3
Roll the eggs in strong liquor a few times, making sure every angle is coated with the liquor, then roll them in salt to evenly coat them with salt.
- 4
Wrap the egg covered in salt with aluminum foil.
- 5
Repeat the above steps, wrap everything, place it in a container, seal it, and leave it in a cool place for about a month.
- 6
Cooking: When cooking rice, just add it to the pot together with the rice and cook until done.
